Chickpea and Green Apple Mix

I need a better name for this. What if I just call it The Mix. That feels like some millennial subscription box where you get organic fancy trail mix sent to your house each month. Anyways.

The Mix

Ingredients

-1 can of chickpeas

-1 large green apple

The below are rough estimates! Taste as you go :)

-1/4 cup chopped fresh parsley

-juice from 1/2 lemon

-1 spoonful of vegan mayo

-1/2 teaspoon of dill

-1/2 teaspoon of salt

-olive oil

-ciabatta bread

Optional

-Cornichons (like 5 maybe? They’re little)

-1 small shallot


Directions

-Strain and rinse the can of chickpeas. Save the liquid! That liquid is called aquafaba and it’s a great egg replacer. I’ll have some recipes up soon that use aquafaba. Just put it in a container/jar that closes and stick it in your fridge.

-Dice the green apple into little squares. My preference is that everything is chopped smaller than the chickpeas.

-Dice the shallot and cornichons if you’re using those.

-Put everything into the same bowl.

-Add the chopped parsley.

-Add in the juice from half a lemon, one spoonful of vegan mayo, the dill, salt, and mix.

-Everything should be a little creamy. Almost like a light coleslaw. I hate to use that word because it also gives me the ick but I don’t know how else to describe it.

-Okay you’re done!

-Toast up some ciabatta bread. Trader Joes sells some great ciabatta rolls that I use.

-Top each open face side with the chickpea apple mixture and drizzle with some fresh olive oil.

-Enjoy!

-TJs also sells these “Organic Corn Chip Dippers” that are basically giant Fritos and they also go really great with this dish.
