Creamy Dijon Dressing And Salad

The title was getting too long so just know that this salad also has golden raisins, crispy beans, hemp seeds, croutons, and whatever else you want to put in it, go crazy.


Dijon Dressing

-Makes enough to dress one whole box of spring mix from Whole Foods

Ingredients

-1/4 cup Dijon Mustard

-1/4 cup water

-1/4 cup olive oil

-1 (or two or three) garlic cloves

-1-2 tablespoon maple syrup

-Lemon juice from one whole lemon

-1/2 teaspoon salt (add more to taste!)


Directions

Toss everything in a blender and mix for like 2 minutes until it’s super light in color and airy.


Salad

Mandatory Salad Mixings

-Golden Raisins. Don’t even THINK about using regular purple grape raisins you have to get the golden ones. Trader Joes sells them!

-Sourdough bread (preferably some slices that are a wee bit stale)

-Vegan parmesan. The Violife Parmesan Wedge works best imo.

-Beans. Preferably a cannellini or butter bean.


Optional Salad Mixings

-Hemp seeds

-Some vegan chicken nugget or chicken patty thing. You can cut it into cubes and put it on top of the salad.


Directions

-Preheat oven to 425 degrees.

-Strain and wash the beans and toss them in some olive oil.

-Put the beans on a tray and bake them for ten minutes.

-While that’s going cube up your bread slices and toss in a little oil and salt as well.

-After ten minutes of the beans toasting, toss in the bread cubes and toast those with the beans for like 7 minutes or until the bread cubes get crispy. Give the whole tray and mix/toss after like five minutes so everything cooks evenly.

-Grab your lettuce of choice (I usually like a spring mix), and dress to your hearts content. Add in the crispy beans and croutons, golden raisins, and mix. Top with vegan parmesan and enjoy!
