Buttermilk Biscuits
Biscuits are a fairly simple pastry to make and great for beginners. Once you get the hang of them they become so easy! From start to finish these take like 30-40 minutes. They make a great weekend breakfast item. But also the Pillsbury Doughboy biscuits and crescent rolls are accidentally vegan so if you don’t actually want to bake you should go get those they’re so good.
BISCUITS
Ingredients
-1 cup + 1 tablespoon chilled soy milk
-Juice from 1/2 of a lemon
-3 1/2 cups all-purpose flour, plus more for surface
-2 teaspoons sugar
-2 1/2 teaspoons baking powder
-2 teaspoons kosher salt
-1/4 teaspoon baking soda
-1 cup (2 sticks) chilled butter, cut into little squares (plus a little more for brushing on top later)
Directions
-Preheat oven to 425 degrees
-Combine the soy milk and lemon juice and set aside in the fridge to curdle into “buttermilk”
-Combine all the dry ingredients in a bowl or food processor and mix. You can also do this by hand!!
-Add the cubed butter. If you’re using a food processor, pulse it a few times until the butter is pea-sized and the mixture looks sandy. You still want some chunks! If you’re doing it by hand, integrate the butter into the dough until you’ve reached the same consistency.
-Remove mixture from food processor if using and put into a bowl.
-Drizzle chilled buttermilk into your bowl and very gently with a fork mix the liquid around until everything is just wet.
-Turn out onto a lightly floured surface and gently press into a 1-2 inch tall square. If your mixture is feeling dry resist the urge to add liquid. Just gently kneed the dough a little smushing it together until there’s less dry spots. The dry spots will also go away when you do the step below.
-Taking a bench scraper or a knife cut the large square into four smaller squares and stack those on top of each other and super duper gently press down/roll out into a inch-inch and a half tall rectangle. Do this twice.
-Taking your knife or bench scraper, cut the large square into 12 small squares.
-Place those squares on a baking sheet and put into the freezer to chill for ten minutes.
-Remove from freezer and brush the tops with melted butter. Here you can add some optional flakey salt or sugar to the tops of the biscuits depending on what flavor you want a bit more of.
-Bake for 15-17 min until the biscuits are golden brown on the edges.
-Remove and let cool for like 2 minutes and then devour all twelve of them right away.
