Chocolate Mousse
Notes
-You might taste the tofu when the mixture is slightly warm in the blender, but once cold you can’t taste it at all imo.
-You have to use silken tofu, you can’t use soft or firm or anything like that.
-I’m pretty sure you can also make this in a food processor but a blender works best.
Ingredients
16oz silken tofu (room temperature if you can)
1 large cup melted and cooled chocolate chips (I like semi sweet/dark) + 1/4 cup 100% cocoa baking chocolate (if you do not want your chocolate flavor to be that dark/rich just make the 1/4 cup the same as the chocolate chips you used.
1 tablespoon maple syrup
1 teaspoon salt
Directions
-Open the silken tofu and strain out any excess water. To a blender add your tofu, maple syrup and salt.
-In a microwave safe container melt your chocolate in 30 sec intervals stirring between each round. Chocolate can burn very quickly in the microwave so be careful! Once all the chocolate is melted let it cool down before adding it your your blender with the other ingredients.
-Blend everything together until smooth and uniform, scraping down sides as needed.
-Once blended pour into your desired cups/jars (or just a Tupperware) and let cool in the fridge for 30min-1hr to set before eating. Top with whatever you want and enjoy!
